They are aiming for something Goucho, Ruth's Chris, Morton's, Hawksmoor. That sets a target for a review.
The atmosphere is right. Dark lighting, sharp knives, snooty waiters, air drying meat on view.
Unfortunately they then fall short, despite the fairly high ( though not outrageous) prices.
I had the aged New York, my wife had the South American fillet, both ordered rare. Both came cooked correctly, but an HOUR after we had ordered. As is often the way, we were past caring about eating and ready to leave. I suspect they put our meal together in 5 minutes once I raised the issue of the delay.
The fillet was good, small but well cooked, tasty. The Strip was large, but surprisingly tasteless. The green beans were over cooked, but rescued by lots of salty butter. The fries were over salted and quite messy, they should have thrown away half of them for being too small and mis-shaped.
On balance I would not go back as though now I know to stick to the simpler and cheaper options, I couldn't be sure the service would be any better.
