We had a two-person tea tasting with 3 + 1 teas (TaiwaneseLishan Gaoleng Oolong, a Japanese shaded Sencha, a South Korean yellow tea, and a charcoal-roasted Chinese mountain Oolong) with Gabriel who shared his vast knowledge of tea cultivation, the art of charcoal tea roasting tea preparation according to tea type, water preparation, impact of water temperature on the tea leaves, infusion techniques, how the tea leaves evolve in aroma, how the teas evolve in taste with each infusion, and how the tea pots, gaiwan, influence the taste. He also shared the history of the different tea regions, the evolution of tea preparation in China, and how different tea flushes taste in different seasons.
